Re: the big knife - heck yeah! In addition to the fire making capability, you need something with which to ward of wandering sasquatches and so forth.
Good point, GingivitisKahn.... and sasquatches have opposable thumbs, so they can open bear canisters, leaving you forced to make a choice between defending your food with your big knife, or going hungry. I know it's gonna take a lot more than bigfoot to pry me away from my mountain house chili!

My winter pack is 20lbs with a few extra "fun" items. Usually carry the RC-3 on my pack strap or the Fallkniven S1 in the side pocket. I prefer the medium size knives for the best of both worlds.

I know you guys have talked about Nutnfancy and watched some of his videos on youtube. He recommends the Sawvivor and your choice of blades for splitting. I have the Sawvivor and the Gerber Gator Saw. The sawvivor is far easier to cut with. For blades I carry a Panawal Khukuri which is "heavy" but as GingivitisKahn pointed out, if I have to defend myself this is the blade of choice.
I'd suggest you ditch that heavy bag and get your hands on a good 10-20° down bag. You can cut 1-2 lbs off that synthetic bag. There should be some good sales going on right about now for winter bags so keep your eyes open.
My winter base weight is 18lbs. For an overnight with food and water I'm looking at 25lbs with my rei flash 65. That was at 10* at night (brrrr). I would add 2lbs per day for more food for winter so I'm in the same ballpark as you mustardman.
You guys baffle me I have a hard time getting my summer pack down to 25 lbs without food and water. Winter is about 50 lbs!
