My go-to is the WBBB b/c it's the most comfortable one I've used.

IMPOSSIBLE JUST TAKES LONGER
My default is a Blackbird 1.7 double, but I take other hammocks when I'm worried about weight.
For the weight-weenie trips, it's usually a WB Traveler.
For weight-weenie trips in the cold, or when bugs are going to be an issue, I take my antique WB ElDorado.
When I'm just hiking into one of my favorite spots to relax a day or two away, I usually bring a Trek Light double, or ENO Doublenest. I just really like those hammocks for lounging around doing nothing.
That's what started my hammock addiction, right tool for the job. Of course, those are just my default hammocks. I've got one or two other options laying around at my disposal. I make sure all my babies see the woods every now and again.

Beginning my NOBO trip on the AT on 2/28/12.
For sleeping I like the WBBB. For breaks on day hikes, it's the Grand Trunk Nano7. Whoopies/UCRs keep me up wear it's proper to sleep. Nacrabiners hold everything together. My favorite weapon against the rain is my OES 12x10. The JRB Mt. Washington 4 fends off the cold from below, while a down bag keeps the top toasty. My cold steel trailboss makes short work of firewood if the weather's been nasty, otherwise my Enzo Trapper and the edge of my right Vasque Breeze suffice. The Ghille kettle keeps the endless warm beverages coming. A Sigg water bottle filled with hot water gets the heat in the hammock started, and a Smartwool sock over it protects me skin from getting burned. My Osprey pack gets everything to camp....most anything else will probably get the direct attention of my Glock 29!

Oh my, I just noticed that you asked "and why"...
Well, for the Hammocks, at least, the Blackbird is super comfortable and has a self. A self... enough said. The Nano7 after whoopieslings weighed in at 6.3 oz if my memory serves me; might have been 6.7 (that's without treehuggers, because I still haven't settled on final lengths for them).
I just got my WBBB recently and had been using a Claytor JH for the past few years. For use with a pad it's a hard one to beat, and the price isn't bad either.

Tough call ... I have two go-to's ... one is my DIY Jerry 5 and my HH Exped with 2QZQ Mod4 for camping ...
Then if it's for a quick nap ... or lolly gagging ... I might grab an ENO or my WB Traveler

Really hard to say. Or, I guess I could really say "I don't have a weapon of choice". Maybe I just like variety? Cannibal?
Or, it comes down to several favs each of which seems to have pros and cons, so which of the pros or cons seems more important to me today?
Weight, convenience, leg comfort, shoulder comfort? And what about insulation options? Will a pad play a part in that?
That said, lately it seems to most often come down to either my JRB BMBH Bridge or WarBonnet BB. Those are also my two heaviest options. If it is cold I love to use a JRB MW4 with the BMBH, or maybe my WB Climashield "Yeti" with my WBBB.
But sometimes I still like to go back and sleep with the gal I started with, my HH with Super Shelter. It is still plenty comfy for me, and some times I just like the extra wind/rain protection I get with that set up with out feeling the need for a huge tarp.
Finally, especially if it is going to be really cold, there is the Claytor No Net/Speer PeaPod combo. Utter simplicity, guaranteed warmth, not my heaviest option, and plenty comfortable. This combo is very hard to beat.
