    Got my trail name 'cause I kept getting introduced as "This is Rich--the chocolatier." Became official when Bleemus wrote it in the log at the top of Stratton Mountain.

    You guys (and gals) are way too kind. Anyway, chocolate's awfully satisfying at the end of a long hiking day. Heck, I eat the beans straight. You join me for a hang, there will always be good chocolate!


    Here's the sort of stuff I usually do, btw. A bit too nice to hike with, but the customers like 'em. The last batch of these was fresh strawberries and crushed cacao beans in milk chocolate.

    Have ever been to a wonderful place called Linville Gorge? It's a great place to meet other hammockers & we would love for you to join us

    Haven't been to Linville Gorge, but my wife and I have hiked Mt. Sterling in the Smokies. I ever get down your way we'll hook up for a hang.

    Chocolatier, I checked out your website. Now, I'm craving chocolate. Do you know of any good chocolatiers in Charlotte, NC? I don't think chocolate would ship well in this 95 degree heat.

    I've never had any artisan chocolate, but I've experimented with things like 99% Lindt. Do you find that most people unfamiliar with fine chocolates can appreciate your chocolates, or does it take some time to develop a more sophisticated palette before one can truly appreciate your creations?

    There was a NC chocolatier in a course I took in France, but I'll have to track her down.

    Regarding the appreciation of good chocolate, I'll let the other folks from last weekend's hang answer that one

    Don't be fooled by high percentages; very dark chocolate requires tremendous skill from the chocolate maker to pull off, and only a few are good enough that I'll use their chocolate for my pieces. Many beans show more nuance at slightly lower percentages, and the best beans are pure white and mild even when eaten straight-up.

    Don't need dry ice if you come out to a Colorado Winter Hang. Just sayin....
