6'0", 210lbs.
Haven't decided on insulation yet. I'm leaning toward a double bottom layer. I'll probably start out with a pad between the layers, then save up for an underquilt. I would like to have that kind of flexibility provided with the double layer. It's my understanding that the double layer comes in both 1.1 and 1.7. Just checked the website. What does "Max Flatness" refer to?

If it helps, I'm 6'2, 230lb and I have a 1.1 DBL based on warbonnet's recommendation.
I'm 6'5", 225lbs. A 1.1 dbl works well for me, though I'm past the "maximum flatness" stage. Brandon should probably answer that himself, but I think he is referring to threshhold of stretching of the fabric from the weight loading.

Would there be something wrong with one layer being 1.1 and the other layer being 1.7? Hmmm...

I was recently in the same shoes as you... I'm about 6'2" and 190 lbs. I sent a LOT of PMs to other WBBB owners and asked their advice. For me (a backpacker who is a bit weight conscious), it was nearly unanimous that everyone including Brandon recommended the 1.1 double. I received mine last week and it's incredibly comfortable and well made.
The "max flatness" rating is Brandon's somewhat conservative estimate of the maximum weight the hammock can support and still provide the user the ability to achieve a flat lay inside.
I also asked Brandon about the hybrid 1.1 + 1.7 double layer, but he steered me towards the 1.1 double so it became a mute point. I never got a final / authoritative answer about the feasibility of a hybrid double layer, so I'm not sure if it's possible or not. I'm sure that you he can sew 2 layers together. My only question or concern - since the 2 fabrics would have differing amounts of stretch, would the lighter fabric's seams endure more forces than the heavier fabric? Would the lighter fabric be more likely to fail at the seams? The hybrid 2 layer might be a good idea, but I think it might need some long term durability testing.
I never pressed the issue with Brandon. My wife used to do some sewing and sell stuff at craft shows. She and her friends would spend a ton of time and money making all sorts of things, and during shows, a lot of people wanted "custom" colors, fabrics, orders. Nothing wrong with that, but from a small business perspective, custom orders become a pain in the rear end, especially if you have plenty of other available inventory.
