    3 day solo trip @ Sequatchie River TN (Pic Heavy)

    I spent 3 days solo hammock camping on the Sequatchie River near Jasper Tennessee Oct. 8-10th, 2010. I traveled via 4-wheeler for a 2 hour ride through extremely rough terrain(mostly rocks) to reach this paradise. I have caught trout there previously, but this time came up empty handed. The coyotes and owls really got vocal during the nights and the weather was perfect. I had a great time and hope to do a week stay next spring.

    It was my version of pasta carbonara. I saw pics on a friends facebook page. They were camped out at the bwca boundary waters and had a big ole pot full. That inspired me to look up the recipe and give it a try. I will be making that stuff again...it was goooooder than snuff and not near as dusty.

    Pasta Carbonara (My version)

    Ingredients


    * 1/2 pound bacon, chopped
    * 3 tablespoon chopped garlic
    * Freshly ground black pepper
    * fresh spaghetti, cooked al dente
    * 2 large eggs, beaten
    * Salt
    * 2 tbs freshly grated Parmesan cheese
    * 8 oz fresh chopped mushrooms
    * 1 finely chopped bell pepper

    Directions

    Add water in your billy pot and bring to a boil. Add pasta and meanwhile Cook the bacon until crispy in your skillet. Remove the bacon and drain on paper towels. Pour off all of the oil except for 3 tablespoons. Add the garlic, bell pepper and mushrooms. Season with black pepper. Cook until the peppers and mushrooms are done. Season the eggs with salt. Remove the Billy pot from the heat and drain off water. Add all ingredients from skillet, crumbled bacon and mix well. Whisk the eggs with some salt and add to billy pot and mix well. Cover pot and let sit for 2 minutes for eggs to thicken. Put in your serving dish and top with cheese. ENJOY
