I think what he is referencing are things like soil compaction, run off (you know all those chemicals used in agriculture get into water systems and create problems for wild life and humans alike), not to mention the heavy reliance on fossil fuels to make said fertilizers and pesticides and to power the equipment. The agriculture industry uses more oil than any other industry in existence.
That's not to mention the impact agriculture has on fresh water supplies.

The only way not to have an impact on the environment is not to exist.
This is not a plea for everyone to commit suicide, just reality. It is not possible to "leave no trace".
