I will venture a guess that you are whipping it upside down.
I don't think I have an up or down side. I whip a gathered end hammock by running a 6-12" cord thru the channel and then tieing it off. I attach my suspension by passing the bulky knot I created in the hammock thru a larkshead knot.

Well, on my Eno with the whoopie sling run through the channel and the lark's head on bottom I got a pronounced center ridge in the hammock body with loose floppy sides. It was very uncomfortable to lay in. When I flipped it so the lark's head was on top it fixed the problem.
The same could occur when gathering the ends. When you first create the W shape you want the bottom of the W to be the side you are laying on. This creates a pocket like effect for your body. If you are laying on the side with the peak of the W there will be the pronounce center line in the hammock body.
This has been my experience. Maybe it's all in my head, but there appears to be an identifiable top & bottom of a hammock for me. If you are experiencing the center ridge & overly floppy sides I recommend flipping you hammock body over; it might work for you too.

I had a similar issue, I re-whipped my ends to tweak it a bit & was able to fix it.
