In most cases companies tend to over-rate their gear for safety considerations. that being said I would still try to stick with what is recommended from said company in most cases.

go with the Explorer delux, it doesn't cost a ton more and should be more comfortable, I'm in the 260 range and it's very comfortable for me. Look on Amazon, I got mine there for $149.00.
I Agree with Dragon360 & Gaberloonzie, try the Explorer Deluxe. I'm a big guy myself, first HH was a Scout model, got it used, held me for nearly a year. Took it to Haiti for relief work last year and it split day one. I slept on the ground for the next two weeks with the sand flees and skeeters, total suckfest! The scout is way small for large and tall folks, Expedition may be too short and not load tested, Explorer is about perfect. I use the Safari with mods now, its 3 pounds with suspension and biners, but for me, total worth it! I'll never go back. let us know what you choose.
How tall are you? I'm 6' and run somewhere between 180 and 200 depending on my diet and habits over the last couple months, and I've got the Explorer Ultralight and think that it's just about perfect for someone of my height. I've heard from many folks that 5'10" is about the comfortable cut-off for the Expedition model--less if you're a particularly large person for your height.
Though, if you have particularly broad shoulders, you may want to go up a size even from the Explorer, to the Safari Deluxe models. They've been said by many to be the Cadillac of hammocks; huge and comfy, but heavy.
Edit: I see this has been covered by folks other than me. Still, I recommend at least the Explorer model.
We've got an Exped and and Explorer. When I weighed 275, I set up the Exped and did a test lay and I will say the it was a bit snug. Set up the Explorer and the lay wasn't as tight thru the shoulders and the added length gave me more of a diagonal lay. Go with the larger of the two is my Teo cents.
Im going to go with the explorer. will the super shelter come with or do i need to hunt me one down?
Super shelter is separate and I've only been able to find them from Hennessy. I've looked at the safari also and was seriously considering it but I talked to James with Hennessy and he said it was really difficult to insulate and more suited to backyard and car camping. By the way, my shoulders are very wide, I wear a size 54 jacket because of them and the Explorer is great - I've even slept on my side in it very comfortably.
