    I'll be glad to give you some tips when I get there. Zac is a master and should be a good resource for you too. In the meantime here's a few:

    My first suggestion is to pick up parchment paper pan liners.

    There are two schools of thought on coals.

    One says to place a few more than your pot diameter on top and a few less under. For example for a 14" you could go with 16 on top and 12 below turning the lid 1/4 turn clockwise and the pot 1/4 turn counter clockwise every 15 minutes.

    The other technique is the one I subscribe too that calls for a ring of coals on the lid and a ring under the pot. With the coals adjacent to one another and on the outside edge of the Dutch oven, no turning is necessary.

    Allegedly, either way will give you about 350* in the oven. As for time, look in a cookbook or ask your wife how long it would take in your kitchen oven at that temp.

    I've found the instructions on this site to be quite helpful. Especially the link near the bottom labeled handy Dutch oven temperature control chart.

    Oh......and the parchment paper that UncleMJM mentioned make clean-ups MUCH easier. Highly recommended!

    I'm an avid DO enthusiast and something I've noticed lately are the size of the charcoal bricketts. They've shrunk! I've had to add more to these standard formulas as in the guide you've provided. I guess this is another attempt from manufacturers to keep their margins. But one thing I've found interesting is the Walmart brand are about the same size as usual. Who'd a thunk it!

    The Hike to Hang3 has begun .. I'm on my way to Fort Smith from Florida to begin my hike into the hang .. I'll start the hike on the 23rd .. hike the OHT as a thru-hike and once in Woolum, head upstream 35-40 miles into Pruitt where I'll pick up the Buffalo River Trail and hike that 14ish into Kyles Landing .. get those DO's ready .. I'll be hungry ..

    Count me in. Besides, I need to pick up a few items I left at the Kiamichi river hang this past weekend. We had a great time with good friends and the dog choir.. Looking forward to meeting a whole new set of hangers as well as seeing the regulars from Texas. See ya early Thursday.

    tncamper and I are taking his yak-hauler (which is a darn nice piece of work... a very advanced mod on a standard utility trailer) and my truck. We can easily carry 8 yaks, maybe 10. We will be hitting the water, me with fishing pole in hand.

    Can get five folks tightly squeezed in the truck, so if we have a full trailer, we may need additional "people transportation." We're not "heading up" the float, but we're doing what we're going to do and any and all are invited to join us. We may need to mooch a lift back to the drop off point to get my truck.

    At any rate, see you all there!
