If I decided to become a cottage vendor, I'd go whole hog on the business plan - either sales would be $400K/yr by the third year, or I'd bow out. I got kids to feed. New Jersey is expensive.

As to how to approach the business ethics, the greatest man to ever walk the planet shared a bit of wisdom some years ago that is highly applicable… "Do unto others, as you desire it to be done unto you." What a better place the world would be, if everyone would heed this simple admonition.
I used to work in a design gallery that featured lots of "rustic" furniture made with sweet gum, hickory sticks, willow vines and the like. I can't count the number of times a customer would look at a piece and say, "Oh, I could MAKE that!" And my response always was, "Yeah. But you don't."
Despite the attitude of those "I can make that myself" people, we did a very good business. Best of luck to any fledgling cottage hammock maker!! Know that there will always be a market for well-made items. Just make your stuff and live your life.
