For joining rope, the Zeppelin Bend. Just learned it a few years ago, and what a great knot it is. Easy and fun to tie, attractive, and easy to untie after being loaded. I've heard that it weakens the rope minimally.
Depending on your pole, you might consider the Timber Hitch. Fast and easy to tie, and incredibly easy to untie. It relies on friction with the object, however, and may not work for your application. Works well on trees - I use it for clotheslines, tarps, bear buckets, etc.
