I usually hang my foot end closer to the tree than the head and end up with about a 5* foot high ridge line when lying in the hammock. I do aim for 30* on the suspension lines. I have that Level App on my phone. I used it when playing around with my hang, but have never used it or anything other than the "eyeball" method out on the trail.

Ahh. The old level question....
Setting up on uneven terrain is the toughest. Normally I'll string up my ridgeline for my tarp, step a fair ways back and eyeball it. So far I haven't noticed that 2-3 degrees in pitch have affected my sleep.
Once the ridgeline's been set I tackle the hammock. Because I leave a pair of prussik knots attached for the tarp, I use them to roughly guage the hang of my hammock, estimating the height by handswidths.
I also use the time tested finger method of guaging the magic 30 degrees. Make a gun by stretching your index finger and thumb. Hold our your hand at arm's length and level the top of the index against the horizon. The line from the tip of your thumb to the tip of your index finger should be roughly 30 degrees. I wouldn't suggest using this technique when aligning power rods in you local nuclear reactor or while constructing a bridge, but for the high stakes world of hammock hanging, it's good enough for me.
In the end, once you've set up your hammock enough times, it'll become second nature to get the right lie. Either that or you'll become so lackadaisical in your hanging ways that you'll sleep in anything, anywhere, anytime and be glad for the chance to do it!

You betcha! Have one on the ridgeline of my hammock and my wife's too. I just returned from an 11-day hike and I don't think I ever got to hang on level ground more than once. Also, I need my feet to be about a bubble higher than my head, else I slide down toward one end, so simply "winging it" doesn't work for me.
I'm happy to be disdained and called "challenged" if need be. And no, I have never broken any clips or anything else on the levels.
