I like mine long enough to cover my head so that if I'm really cold I can burrow if I need to.
I like the length and hood of my bag/TQ lately to shield my eyes from the evil morning sunshine!

I prefer it long enough so that I can pull it over my head when it's cold. When it's warm I just push it down a bit and let it bunch up. It is light enough that the bunch doesn't bother me. I do not like my feet touching the bottom, but you don't want it too long as empty space is a waste of heat.
Thanks for all the input everybody. I just received my first down quilt today from Tim at Enlightened Equipment and absolutely love it but was sent a 72" long instead of a 78". The length just makes it to the top of my head with my feet against the bottom just barely touching. Even though its smaller than I wanted I think it will work. Of course Tim would replace it if needed but I think it might work!
I'd go long, it'll give you more flexibility. It'd suck to be out and have it be a bit colder than expected and not be able to just pull that TQ up a bit more and go back to sleep. At least that was my reasoning when I built mine.
I will go against the grain here. I prefer to the top of the shoulders just because I hate having something covering my face when I sleep. A good beanie in cold weather and I am good.
I like mine long enough to pull over my head w/o punching out the foot box with my feet.
But like Ploppy, I'm most comfortable sleeping just the way he described it, and don't mind a little bunching around the shoulders.
