All literature i can find on the waterman knot say it is designed to tie
two pieces of webbing together. For a loop around an anchor pole, that'd hold the weight but then you'd still needa tie amsteel to it. Splice eyes and continuous loops out of amsteel for these purposes. And get a hunk of webbing, way better for trees anyhow.

You can also (though you just asked for a choice between the Bowline and the Alpine Butterfly) use the Figure Eight Loop (page 23, Fig. 28) which also places the loop at the end of the rope.
It can be secured with a Strangle Knot (page 33) or with a Stopper Knot (see page 35)
It is considered to be more secure, hence its widespread use in climbing.

For amsteel fixed loops I choose alpine butterfly.
And for joining two amsteel ropes I choose a slipped zeppelin bend.
Both of these knots will hold great and resist jamming great.
ABL resists ringloading better than most loops.
Ringloading is like grabbing loop on two sides and pulling in opposite directions.
To make alpine butterfly loop easy to undo insert a strong crushproof smooth toggle into knot before tightening. Then to untie tap toggle out with a mallet or smooth stone.
