I feel like one of God's chosen people, having had the opportunity to share with many fine companions these varied and lovely realms of our natural world. -Fred Bear
People have done this before. If you have some sewing skills or know someone that does you can make a sleeping bag into a very useful UQ. A problem that could arise is the ends are more open and prone to drafts so finding a way to close them off would help keep more warmth. The video looked like he was lying straight in the hammock. Generally people are more comfortable laying diagonally which allows you to be more flat. Because of this I think the UQ would be better off secured to the hammock suspension as opposed to the tree.
Don't let life get in the way of living.
I started out with an old sleeping bag, too. You do need some way to cinch the ends, either by adding loops or making a channel with some wide biased tape or material. Then you can run some cord through it with a cord lock. I don't know that having one folded in half is going to be wide enough to cover adequately, though. I folded mine in thirds that way the middle could open up a little if needed.

I bought a mattress cover from Ikea's Markdown Bin. I added grosgrain ribbon making a channel around all four sides added shock cord, it works very well, I have only been down to 40 with it because it just has not been cold when we have been hanging. It does not compact down small, however it is full length, fits surprisingly well. I am very happy with it. I spent $5.00USD the ribbon I already had. Not pretty, however the quilt protector covers it.
