I plan on sewing off the arm holes and sewing the two vests side by side to make myself an underquilt
each vest is $30 and has 100 g of primaloft.

Cool idea but have you considered the Jarbridge River from http://www.arrowhead-equipment.com/kick-***-quilts.html You are going to spend $60 or so on that plus time plus I would think you are limiting yourself a bit with its size. Just my thoughts. The Jarbridge is a very versatile piece of gear at $100
I was looking at it as a DIY project since I could customize it so i could also wear it while at camp.
