Goat Rocks is great for allowing a variety of entry hikes to fit your level of time/fitness. Trail 2000 is the PCT so you could theoretically start at Mexico and get there... but you'd have to hurry!
I've hiked from Walupt to Tieton river, LOTS of nice spots along the way. I favor stealth camping and near leave-no-trace style camping, so anywhere with trees and nearby water works for me.
Lost lake is supposed to be gorgeous too. If we choose a site anywhere in here, I'll probably pick a ~10 mile journey to reach it.
Edit: this whole area is at 5000+ elevation. In most years there is snow remaining in July, but PCTa and other sources are indicating a fast melt this year. And snow doesn't bother me that much anyway.
