Every time I check the local thrift stores, there are always dozens of golf clubs. I keep asking myself what in the world could they be used for. Any ideas for hammock or backpacking applications?

If they're graphite shafts, you can remove the club head and turn then into fixed length trekking poles. You could also cut one up and make toggles for your Marlin Spike.
You can also make frame stays out of the shafts if you're into making DIY packs...I'm sure there are many more uses.
fish attractor in your lake, if yu put them all together just right.

Both those are great ideas and there are actually gear makers that've been using repurposed golf shafts for UL trekking poles.
rigging it up to fish is just an awesome bonus!
For a thrift shop project, I say go for it!
I don't have experience with bridge hammocks yet, but I would think you could use the shafts for the spreader bars.

So for I've never seen one with graphite shafts, just steel. If you can use it for a trekking pole, you're shorter than I am.
The DIY graphite trekking poles are a bit shorter than typical trekking poles, but I seem to have adjusted well to them. They are really strong, but when I tried them as spreader bars on a bridge hammock they flexed sideways quite a bit and I was concerned they would snap. At the risk of tossing out an inappropriate comment, please keep this suggestion to golf clubs, ok? I recommend searching for golf clubs with as long a shaft as possible and XS marked on them indicating "extra stiff". That will help support your weight better and the longer shaft will help in the obvious way. I trimmed part of the grip off to fit my hand. They are extremely light and strong not to mention a hechuva lot cheaper than the carbon fiber ones at retail outlets.
Happy trails
