I'm pretty much like the majority (I think) ... about sitting height.
However, I would like to hang my hammock in a nice photo-op location some day, like the edge of a cliff, across a creek bed, between 2 rock walls, or ?? It probably wouldn't be at 'sitting height', but I'd have some good pictures to show the wife and get to see her eyes roll to the back of her head!

About eye level if the trees are 15' or so apart. I was camping this weekend and it was buggy at times so I needed to set up in an open area instead of the dank woods. The only trees I could set up in were 20' or more apart, so I set up as high as I could reach. But to get the sag right I was only a few inches off the ground. It was not optimal for me, but it was functional.

Bobbin Tension - A Personal Viewpoint
If you have a tarp that doesn't have a lot of coverage it might make sense to hang a little higher so that you don't get splash from the ground when it's raining.
It's kind of a stretch since most people will get a tarp that provides enough coverage so that the rain doesn't hit the ground beneath their hammock to begin with, but it's a reason.
You could try "extreme hammocking"!
